Cookies and Cream Cupcakes

Cookies and Cream Cupcake Recipe:
- 2 1/4 cups all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 2/3 cups sugar
- 1/2 cup butter (make sure it's soft)
- 1 cup milk
- 3 teaspoons vanilla
- 3 egg whites
- 1 cup crushed Oreos (just the cookie)
Butter Cream Frosting:
- 1/2 cup butter, softened
- 1/8 teaspoon of salt
- 4 cups icing sugar
- 2 egg yolks, beaten
- 2 1/2 teaspoons vanilla extract
- 2 tablespoons milk
Steps For Cupcakes:
1. Preheat oven to 350 degrees Fahrenheit. Line two 12 slot muffin pans/ one 24 slot with large muffin cup liners.
2. Put flour, baking powder, and salt together in a large bowl. Stir in sugar. Add butter, milk, and vanilla; stir together until completely mixed. Add egg whites; stir until completely mixed. Lastly stir in 1 cup crushed Oreos.
3. Spoon batter into prepared muffin pans. Bake 20 to 25 minutes or until toothpick inserted into centers comes out clean. Cool in pans/ wire rack for 10 minutes or until completely cool.
4. Frost cupcakes; garnish with additional cookie crumbs.
Steps For Frosting:
1. Put butter in a large bowl, add salt and part of sugar gradually, blending after each ingredient. Add egg yolks and vanilla; blend well. Add remaining sugar, and milk; mix until right consistency.
Makes enough for all 24 cupcakes plus some, I'd say it would make enough for 30.
